Freeze-drying is a technology that uses the principle of sublimation to dry. It is the process of rapidly freezing the dried material at low temperature, and then sublimating the frozen water molecules directly into water vapor escape in the appropriate vacuum environment. The product obtained by freeze-drying is called lyophilizer, and this process is called lyophilization.
The substance is always at a low temperature (frozen state) before drying, and ice crystals are evenly distributed in the substance. During the sublimation process, concentration will not occur due to dehydration, and side effects such as foam and oxidation caused by water vapor are avoided.
The dry substance is in the form of dry sponge with many pores, and its volume is basically unchanged. It is very easy to dissolve in water and restore to its original state. Prevent the physical, chemical and biological denaturation of dry substances to the greatest extent.

5. Since the water in the material exists in the form of ice crystals after pre-freezing, the inorganic salt dissolved in the water is evenly distributed in the material. During sublimation, the dissolved substances dissolved in water will precipitate, avoiding the phenomenon of surface hardening caused by the precipitation of inorganic salts carried by the internal water migration to the surface in general drying methods.
6. The dried material is loose, porous and spongy. It dissolves quickly and completely after adding water, and almost immediately restores its original properties.
7. Because the drying is carried out under vacuum and there is little oxygen, some easily oxidized substances are protected.
8. Drying can remove more than 95%~99% water, so that the dried product can be stored for a long time without deterioration.
9. Because the material is frozen and the temperature is very low, the temperature of the heat source for heating is not high, and the requirements can be met by using normal temperature or low temperature heaters. If the freezing chamber and drying chamber are separated, the drying chamber does not need insulation, and there will not be much heat loss, so the use of heat energy is very economic.
