Freshly picked mushrooms use vacuum cooler to achieve the purpose of rapid internal cooling. The cooling time is generally about 30 minutes. The advantage of vacuum precooling is that it is fast, can reach the central temperature for cooling, and let the mushrooms enter a dormant state, stop the production of respiratory heat, and stop the growth and aging.
At this time, the mushroom is in a sleep state, with no water on the body surface, sterile, and the temperature drops to about 3 °C of fresh-keeping temperature. Then it is stored in the fresh-keeping warehouse in time to achieve the purpose of long-term storage.
